Gluten Free Baking Mix

More people than I realized have the need to get on a Gluten-Free diet.  I've found some links lately that look like they offer some really GOOD recipes along those lines, rather than stuff that tastes like cardboard.  This one looked good!
Soooooooo, in case you or someone you know is looking for this type of info...visit the Ginger Lemon Girl....and some of the blogs in her sidebar.  She has a whole list of good-looking recipes, like the one above and Chocolate Chip Granola Cookies. Her Baking Mix (like Bisquick) would be SO helpful to someone on a GF diet....and WAY, WAY less expensive than the average GF baking mixes and pancake mixes you find in the health food stores or co-ops!   Actually, much of it is useful even if you're just trying to cook/eat more healthy!  I was drooling over the Blueberry Muffins on her site!  She uses various types of flours and "good" sweeteners............. like applesauce, bananas, agave nectar, stevia, honey, rapadura, sucanat, etc.  By the way, what IS agave nectar.....and I've never even heard of rapadura!??!  Sounds super-duper-healthy, eh!??!  Anyway, I would consider her blog a really fabulous and helpful resource if someone in my family required gluten-free foods.  (Should I be feeling a little guilty about the very UN-healthy choc-chocolate chip cookies we're devouring right now?)
